An incredible day I had during my holiday with my girlfriend in Puerto Rico, Gran Canaria.
We were relaxing by the beach when low tide took over in the late afternoon, so I made a dive to see if they was any fish around me, but on the rocks was full of sea urchins.
OMG a strong emotion guys was so full of sea urchin and I could not resist to catch up some of them and taste it.
For a Chef there is nothing better then catch up a fresh seafood and make a delicious dish!!!
Here how a make my dish:
Spaghetti with sea urchin, fresh tomato and croutons
For 2/3 people
-SEA URCHIN 10-12
EV OLIVE OIL
-Open and clean the sea urchin.
HOW TO CLEAN A SEA URCIN?
Wearing gloves, turn the sea urchin upside-down to expose the mouth. Using a towel for stability, take the kitchen shears and pierce a hole near the perimeter of the skeleton. Then cut a circle of about a 3″ diameter out of the shell. Use the spoon to lift up the circular cut part of the shell, then remove it and the entire chewing organ known as Aristotle’s lantern, which looks like a white star-shaped flower.Pour out the liquid and discard the “black stuff” which is made up of its partially digested food, such as seaweed and other organic matter
-make the croutons
HOW TO MAKE A HOMEMADE CROUTONS?
Croutons are pieces of bread that have been toasted in a frying pan, until they are crisp and golden brown.
To make cubes, take 1-inch slices of bread and cut them into 1-inch strips and then again crosswise into cubes, put in a frying pan and sprinkle on the salt and any (optional) dried herbs and toss to evenly coat the bread for few minutes.
-cook the fresh tomato with garlic in a pan
-Fill a large pot 2/3 of the way with water, add salt if desired, wait for the water to boil and then add pasta to the water and then mix with all the ingredients
REMEMBER TO ADD THE SEA URCHIN RAW!!!
In the end put the homemade croutons, add lemon and EV Olive Oil.
