Linguine with mussels and cherry tomatoes recipe

Finally I’m at home in  Italy, I’ve time for myself and to cook for my family.

Today for lunch I made: linguine pasta with mussels, cherry tomatoes, garlic, chilli and parsley. It is a easy recipe and really taste seafood pasta

Here the  recipe:

Ingredients for 5 people:

500 gr of linguine pasta (de cecco)

2 kg of mussels rinsed, scrubbed and beards removed

10  garlic cloves sliced

30 gr of fresh chilli sliced

500 gr of cherry tomatoes cutted in an half

150gr of chopped parsley

100 gr of white wine

extra vergin olive oil

salt

Method:

Put extra vergin olive oil in a pan and slowly cook the garlic until softened. Add fresh chilli and cherry tomato and cook for 5 minutes.


In another pan cook the mussels until open up


Remove from shells; strain the liquid and join to the other pan where you have cherry tomatoes and put the mussels in to a bowl.

In a salty water cook the linguine al dente, place in the pan with cherry tomatoes and cook for another 2 minutes.

Out of the heat add the mussels, parsley and serve.
